Ingredients
For the apples
3 medium apples
3 tablespoons sugar
1 tablespoon butter
½ teaspoon cinnamon
For the cake batter
1 ½ cups Grano Pampa Chickpea Flour
½ cup sugar
2 eggs
½ cup milk
⅓ cup neutral oil
1 teaspoon vanilla extract
1 teaspoon baking powder
½ teaspoon cinnamon
1 pinch of salt
Instructions
1. Prepare the oven and pan
Preheat the oven to 180°C (350°F).
Use a round cake pan approximately 22 cm (9 inches) in diameter.
Grease the bottom and sides well to make the cake easier to release.
2. Prepare the apples
Peel the apples, remove the cores, and cut them into thin slices.
They don't need to be paper-thin. Slices about ½ cm thick will hold their shape better while baking.
3. Caramelize the apples
Place the sugar and butter in a skillet over medium heat.
Once the butter has melted and the sugar begins to form a soft caramel, add the apple slices and cinnamon.
Cook for about 3–4 minutes, carefully turning the apples, until they are lightly golden.
4. Arrange the apples
Arrange the caramelized apples over the bottom of the prepared cake pan.
Overlap the slices slightly to cover the entire surface.
Reserve any caramel or liquid left in the skillet.
5. Mix the dry ingredients
In a bowl, combine the Grano Pampa Chickpea Flour, baking powder, cinnamon, and salt.
Mix well.
6. Prepare the wet ingredients
In another bowl, whisk the eggs and sugar.
Add the milk, oil, and vanilla extract.
Mix until evenly combined.
7. Combine the mixtures
Gradually add the dry ingredients to the wet mixture.
Stir with a spatula or whisk until you have a smooth batter.
The consistency should be creamy and similar to a traditional cake batter.
