2 ripe bananas
1 cup chickpea flour Grano Pampa
2 eggs
⅓ cup brown sugar or regular sugar
¼ cup neutral oil (such as sunflower or corn oil)
1 teaspoon baking powder
1 teaspoon vanilla extract
1 pinch of salt
½ teaspoon cinnamon (optional)
¼ cup walnuts or chocolate chips (optional)
Instructions
1. Preheat the oven
Preheat the oven to 350°F (180°C) for 10 minutes. Grease, butter, or line a loaf pan with parchment paper.
2. Prepare the batter
In a bowl, mash the ripe bananas until smooth. Add the eggs, sugar, oil, and vanilla extract. Mix well until fully combined.
3. Add the dry ingredients
Add the chickpea flour, baking powder, salt, and cinnamon (if using). Mix gently until you get a smooth batter. Fold in the walnuts or chocolate chips if desired.
4. Bake
Pour the batter into the prepared pan and bake for 30–35 minutes, until golden and set. To check doneness, insert a knife into the center—if it comes out clean, it’s ready.
