Ingredients

  • 1 cup chickpea flour Grano Pampa

  • 1 egg1 cup milk (dairy or plant-based)

  • 1 tablespoon neutral oil

  • 1 pinch of salt

  • 1 teaspoon sugar (optional)

  • ½ teaspoon vanilla extract (optional)







Instructions


1. Prepare the batter

In a bowl, combine the chickpea flour, egg, milk, oil, and salt. If you prefer sweet pancakes, add the sugar and vanilla extract.

Whisk until smooth and lump-free.


Helpful tip: let the batter rest for about 5 minutes to allow the flour to fully hydrate.


2. Cook the pancakes

Heat a non-stick pan over medium heat and lightly grease it with a few drops of oil. Pour a small amount of batter into the pan and swirl to form a thin pancake.

Cook for 1–2 minutes on each side, until golden.


3. Repeat

Repeat the process with the remaining batter. You can stack the pancakes on a plate to keep them warm.


4. Serve

Serve with fresh fruit, honey, yogurt, or your favorite toppings. You can also fill them with savory options like sautéed vegetables or creme cheese.
