When temperatures drop, few things are as comforting as a good homemade lentil stew. This classic dish from Argentine cuisine is nutritious, hearty, and perfect for sharing.

Lentil stew combines legumes, vegetables, and spices in a simple yet flavorful preparation. Plus, lentils are a great source of plant-based protein, fiber, and iron, making this a wholesome and well-balanced meal.

In this version, you can use Grano Pampa lentils or large lentils, which add more texture and absorb the flavors of the stew beautifully.

Ingredients for vegetarian lentil stew: dried lentils, chopped onion, tomato, potato, and carrot cut into cubes, along with assorted seasonings.

Ingredients

  • 1 cup lentils (or large lentils)

  • 1 onion, chopped

  • ½ red bell pepper, chopped

  • 1 carrot, diced

  • 1 potato, diced

  • 1 tomato, diced or ½ cup crushed tomato

  • 2 tablespoons oil

  • Salt, pepper, and spices to taste

  • 3 cups water or broth


Instructions


1. Prepare the base

In a large pot, heat the oil over medium heat. Add the onion, bell pepper, and carrot. Cook for a few minutes until the vegetables begin to soften.


2. Add the stew ingredients

Stir in the tomato and seasonings to taste. Mix well to combine the flavors. Then add the pre-cooked lentils and the diced potato.


3. Cook the stew

Pour in the water or broth, stir, and bring to a boil. Then reduce the heat and simmer for 30 to 45 minutes, until the lentils are tender and the stew has thickened.


Helpful tip: If you prefer a thicker stew, mash some of the potatoes or lentils against the side of the pot.


4. Serve

Taste and adjust salt and pepper if needed. Serve hot and enjoy with warm bread.
