Pea Flour Croquettes

These pea flour croquettes are a fantastic way to incorporate legumes and vegetables into your meals in a delicious way. With a crispy exterior and a soft, flavorful interior, they’re perfect as an appetizer, side dish, or even a light main course.

Ingredients
1 cup pea flour (Grano Pampa)
1 cup vegetable broth (or water)
½ small onion, finely chopped
½ carrot, grated
1 egg
2 tablespoons fresh parsley, chopped
½ teaspoon salt
Freshly ground black pepper, to taste
Oil for frying or cooking
Instructions
Prepare the base
In a small saucepan, bring the vegetable broth to a boil. Remove from heat and add the pea flour all at once, stirring vigorously with a wooden spoon until a thick, smooth dough forms. Let it cool slightly.
Cook the vegetables
In a pan with a little oil, sauté the chopped onion until translucent. Add the grated carrot and cook for a few more minutes until tender. Remove from heat.
Mix everything together
In a large bowl, combine the pea flour dough with the sautéed vegetables, the beaten egg, chopped parsley, salt, and pepper. Mix well until all ingredients are fully incorporated.
Shape the croquettes
With slightly damp hands, shape the mixture into small balls or cylinders, forming croquettes.
Cook
You can either fry them in hot oil until golden on all sides, or bake them in a preheated oven at 350°F (180°C) for 20–25 minutes, flipping halfway through, until golden and cooked through.
Serve
Serve the croquettes hot, on their own or with a light sauce such as herbed yogurt or homemade mayonnaise.
