These scones combine chickpea flour, cheese, and a few simple seasonings to create a tender dough with a golden, flavorful exterior.
They're quick to prepare and don't require any rising time: mix, shape, cut, and bake.

1 ½ cups Grano Pampa Chickpea Flour
½ cup fine cornmeal
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon paprika
½ teaspoon dried oregano
60 g cold butter
1 egg
½ cup milk
100 g grated cheese
Black pepper to taste
Instructions
1. Prepare the oven
Preheat the oven to 200°C (400°F).
Line a baking tray with parchment paper or lightly grease it.
2. Mix the dry ingredients
In a large bowl, combine the Grano Pampa Chickpea Flour, cornmeal, baking powder, salt, paprika, oregano, and black pepper.
Mix well to distribute the seasonings evenly.
3. Add the butter
Cut the cold butter into small cubes and add it to the bowl.
Using your fingertips, rub the butter into the flour mixture until it resembles coarse crumbs.
The butter doesn't need to disappear completely. Small pieces will help create tender scones.

4. Add the cheese
Add the grated cheese and mix gently.
Reserve a little for the top.
5. Add the liquids
In another bowl, lightly whisk the egg and milk together.
Make a well in the center of the dry ingredients and pour in the liquid mixture.
6. Form the dough
Mix with a spatula until the ingredients begin to come together.
Finish bringing the dough together with your hands, but avoid kneading it too much.
The dough should be soft and slightly moist.
Helpful tip: If it's too dry, add an extra tablespoon of milk. If it's too sticky, sprinkle in a little more chickpea flour.
7. Cut the scones
Place the dough on a lightly floured surface.
Flatten it to approximately 2 cm (¾ inch) thick.
Cut the scones with a round cutter or divide the dough into triangles.
8. Prepare for baking
Transfer the scones to the baking tray, leaving some space between them.
Brush the tops with a little milk and sprinkle with the reserved cheese.
9. Bake
Bake for approximately 15–18 minutes, until golden on top and firm around the edges.
10. Serve
Remove from the oven and let them rest for a few minutes before serving.
