1 small carrot, grated
2 tablespoons fresh parsley, chopped
3 tablespoons Grano Pampa Chickpea Flour
1 teaspoon paprika
½ teaspoon cumin
Salt and pepper to taste
Oil for cooking
Instructions
1. Cook the beans
If using dried black beans, soak them overnight and cook until tender.
Drain well and allow them to cool before starting the recipe.
2. Prepare the base mixture
Place the cooked black beans in a large bowl.
Mash them with a fork or pulse briefly in a food processor, leaving some texture.
3. Add the vegetables
Add the onion, grated carrot, and parsley.
Mix well until evenly combined.
4. Season and bind
Add the paprika, cumin, salt, and pepper.
Mix in the Grano Pampa Chickpea Flour until a firm mixture forms.
Helpful tip: If the mixture feels too wet, add an extra tablespoon of flour.
5. Shape the fritters
Using a spoon, scoop small portions of the mixture.
Shape them into small round fritters using your hands.
They don't need to be perfectly uniform.
6. Cook
For a lighter version, place the fritters on a lightly greased baking tray and bake at 200°C (400°F) for about 20 minutes.
You can also cook them in a skillet with a small amount of oil.
Turn them halfway through cooking for even browning.
7. Serve
Serve warm with yogurt sauce, hummus, guacamole, or a fresh salad.
They are also perfect for gatherings and appetizer platters.
And that's it! Your black bean fritters are ready to enjoy.
