Ingredients


  • 1 cup of Grano Pampa pea flour

  • 1 cup of chopped (or sautéed) fresh spinach

  • 2 eggs

  • 1/2 cup of milk

  • 1/4 cup of oil

  • ½ small chopped onion

  • 1 teaspoon of baking powder

  • Salt and pepper to taste

  • Diced or grated cheese (optional)


Preparation


1. Prepare the ingredients

Chop the spinach and onion. If you prefer a softer texture, you can sauté the onion for a few minutes beforehand.


Helpful tip: You can replace the spinach with finely chopped broccoli to vary the recipe.


2. Mix

In a bowl, whisk the eggs with the milk and oil. Add the spinach and onion and mix well.


3. Incorporate dry ingredients

Add the flour, baking powder, salt, and pepper. Mix until you have a smooth batter. If using cheese, add it at this stage.


4. Transfer to the mold

Pour the mixture into greased muffin tins or paper liners.


5. Bake

Preheat the oven to 180°C for 10 minutes. Bake the muffins for 20 to 25 minutes, until golden brown and firm.


6. Serve

Let them cool slightly and unmold. They're ideal both hot and at room temperature.
