2 cups cooked black beans (Grano Pampa)
1 large onion, chopped
1 red bell pepper, diced
2 garlic cloves, minced
1 large tomato, diced or
1 cup crushed tomatoes
2 tablespoons olive oil
1 teaspoon cumin
1 teaspoon paprika
½ teaspoon chili flakes (optional)
Salt and pepper to taste
½ cup water or vegetable broth
Instructions
1. Sauté the vegetables
In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onion and cook for about 3–4 minutes, until softened and translucent. Add the red bell pepper and garlic, and cook for another 2 minutes until fragrant.
