Ingredients
2 cups cooked chickpeas Grano Pampa
1 carrot, thinly sliced
½ red bell pepper, sliced into strips
1 small onion, thinly sliced
2 tablespoons olive oil
Juice of ½ lemonSalt and pepper to taste
Sesame or sunflower seeds (optional)
Instructions
1. Sauté the vegetables
Heat the olive oil in a pan over medium heat. Add the onion, carrot, and red bell pepper. Cook for 5–7 minutes, until tender but still slightly firm.
2. Add the chickpeas
Stir in the cooked chickpeas and cook for another 5 minutes until heated through. Season with salt and pepper to taste.
3. Add the dressing
Remove from heat and add the lemon juice. Mix well.
Helpful tip: adding the lemon at the end keeps the flavor fresh and bright.
4. Serve
Serve warm and finish with seeds on top if you’d like to add extra texture.
