Ingredients
1 cup of cooked black beans Grano Pampa
3 tortillas (they can be wheat or whole wheat)
½ cup cooked rice (white or brown)
½ chopped onion
½ bell pepper, sliced into strips
1 carrot, cut into strips
1 tablespoon of olive oil
Salt and pepper to taste
Avocado, tomato, shredded cheese (optional)
Preparation
1. Prepare the filling
Chop the onion and cut the carrot and bell pepper into thin strips. In a frying pan, heat the olive oil and sauté the vegetables for a few minutes until they are soft and lightly browned.
2. Add the beans
Add the cooked black beans, season with salt and pepper, and mix well. Cook for 5 to 10 minutes to allow the flavors to meld.
3. Assemble the burritos
Place a tortilla on a flat surface. Add a base of rice, then the bean filling, and if you like, add extras like avocado, tomato, and cheese.
Helpful tip for the recipe: If you want more flavor, you can add lemon or some hot sauce to the filling.
4. Close
Fold the edges inwards and roll up to form the burrito. If you like, you can toast it for a few minutes in a pan to make it firmer and crispier on the outside.
5. Serve
Cut them in half so you can see the filling... and enjoy!
