Ingredients
1 cup cooked Grano Pampa black beans
2 tortillas (wheat or corn)
100 g cheese (mozzarella or similar)
½ onion
½ bell pepper
1 tablespoon olive oil
Salt and pepper, to taste
Cumin, paprika, or chili powder (optional)
Instructions
1. Prepare the filling
Chop the onion and bell pepper. Heat olive oil in a pan and sauté both for about 5 minutes, until softened.
2. Add the beans
Add the cooked black beans and season with salt, pepper, and spices to taste. Cook for a few more minutes and lightly mash some of the beans to create a creamier texture.
Helpful Tip: For extra creaminess, you can add a spoonful of cream cheese or avocado to the filling.
3. Assemble the quesadillas
Place one tortilla in the pan, add the bean mixture and cheese on top. Cover with another tortilla or fold it in half.
4. Cook
Cook over medium heat until the cheese melts and the tortilla is golden. Carefully flip and brown the other side.
5. Serve
Remove from the pan, cut into triangles, and serve hot… they’ll disappear fast.
