If you're looking for a homemade alternative to traditional nuggets, these baked chickpea nuggets are a delicious, lighter option that’s very easy to prepare.

They turn golden and crispy on the outside, tender on the inside, and have a perfectly spiced flavor that makes them irresistible. Plus, they’re made with simple ingredients and provide plant-based protein, fiber, and great satiety—ideal for adding healthier options without sacrificing taste.

They’re perfect for a quick meal, a snack, or even for meal prep.

Ingredients

  • 1 cup cooked chickpeas

  • ½ onion

  • 1 garlic clove

  • 2 tablespoons oats, breadcrumbs, or panko

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • Paprika, cumin, and curry (optional)



Instructions


1. Blend the mixture

Place the cooked chickpeas in a food processor along with the onion, garlic, olive oil, and seasonings. Process until you get a moist but firm mixture.

It doesn’t need to be completely smooth—a bit of texture works well.


2. Shape the nuggets

Using your hands, form small nugget-sized portions. If the mixture is too wet, add a bit more oats or breadcrumbs to improve consistency.


3. Preheat and arrange

Preheat the oven to 180 °C (350 °F) for 10 minutes. Place the nuggets on a baking tray lined with parchment paper or lightly greased, leaving space between each one.


Helpful tip: for extra crispiness, brush them lightly with oil before baking and sprinkle some seeds on top.


4. Bake

Bake for 20–25 minutes, flipping halfway through, until golden and crispy on both sides.


5. Serve

Serve freshly made, warm and crispy. They pair perfectly with dips like hummus, homemade mayo, or a yogurt-based sauce.
