Ingredients
1 cup of cooked white beans, Pampa Grano
1 carrot
1 stalk of celery
½ onion
1 clove of garlic
½ cup of short pasta (elbow macaroni, fusilli, or similar)
1 cup of crushed tomatoes
3 cups of broth or water
2 tablespoons of olive oil
Salt and pepper to taste
Oregano, bay leaf and basil (optional)
Preparation
1. Prepare the base
Dice the onion, garlic, carrot, and celery. In a pot, heat the olive oil and sauté everything for 5 minutes until soft and fragrant.
2. Add liquids
Add the crushed tomatoes and the broth or hot water. Mix well.
3. Add the beans
Add the cooked white beans and seasonings to taste. Cook over medium heat for 15 minutes.
4. Add the pasta
Add the pasta and cook according to the package directions (approx. 8–10 minutes). The soup will thicken and become more substantial.
5. Serve
Serve piping hot.
