Ingredients


  • 2 eggs

  • ½ cup Grano Pampa chickpea flour

  • ⅓ cup milk (plant-based or regular)

  • 1 tablespoon honey

  • 2 tablespoons shredded coconut (optional)

  • 2 tablespoons chocolate chips

  • 1 teaspoon baking powder

  • 1 teaspoon oil (for the pan)

  • Vanilla extract, to taste


Instructions

1. Prepare the batter

In a bowl, whisk the eggs. Add the chickpea flour, milk, honey, and vanilla if using. Mix well until you get a smooth batter.

2. Add the extras

Fold in the shredded coconut and chocolate chips. Mix gently.

3. Cook the pancakes

Heat a non-stick pan with a little oil. Pour small portions of batter and cook over medium heat for 2–3 minutes. When bubbles appear on the surface, flip and cook for another 1–2 minutes.

Helpful Tip: Cook over medium-low heat so they cook through without burning on the outside.

4. Serve

Stack the pancakes and drizzle honey on top.Add more honey, fruit, or anything you like… and turn a simple breakfast into something amazing.
