If you're looking for a plant-based alternative with incredible texture and flavor, these vegan chickpea milanesas (no-chicken style) are a game changer.

Made with processed chickpeas and a pre-cooking step that helps build structure, they turn out firm, tender inside, and perfectly crispy on the outside. The result is an affordable, vegan recipe that works as a delicious substitute for chicken in any meal.

Perfect with salads, mashed potatoes, or in a loaded sandwich.

Servings: 4 servings

Prep Time: 45 minutes

Difficulty: Medium

Nutritional info: Vegan | High in plant-based protein | High in fiber | Dairy-free | Very filling

Ingredients

For the base:

1 cup cooked Grano Pampa chickpeas

2 garlic cloves

Fresh parsley, to taste

1 tablespoon soy sauce

1 teaspoon mustard

½ cup plant-based milk

Salt, pepper, and paprika to taste

For the dough:

Chickpea flour (as needed)

For breading:

½ cup plant-based milk

1 teaspoon mustard

Chopped garlic and parsley

Panko and/or breadcrumbs

For cooking:

Oil for frying

Instructions

1. Process the base

Add chickpeas, garlic, parsley, soy sauce, mustard, plant-based milk, and seasonings into a food processor. Blend until you get a smooth paste.

2. Form the dough

Transfer the mixture to a bowl and gradually add chickpea flour until a workable dough forms. Gently knead and let it rest for 5 minutes.

Helpful Tip: The dough should be firm but still flexible.

3. Shape

Roll out the dough with a rolling pin and cut into cutlet shapes (rectangles or squares).

4. Pre-cook (key step)

Boil the cutlets in vegetable broth for 15 minutes. Remove and let them cool completely. This step is essential to achieve a real “no-chicken” texture.

5. Bread

Prepare a coating mixture with plant-based milk, mustard, garlic, and parsley. Dip each cutlet in the liquid and then coat with panko or breadcrumbs.

6. Cook

Fry in hot oil until golden and crispy. You can also bake or air-fry for a lighter version.

7. Serve

Serve hot with a squeeze of lemon. Perfect for sandwiches, mashed potatoes, or fresh salads.

And that's it! Your vegan chickpea milanesas are ready to enjoy.
